We eat a ton of salad, but even so, there are times when I overbuy lettuce, don’t take the time to store it properly, and end up with sad looking salad greens. Fortunately, it’s simple to save limp lettuces, sad salad, glum greens… okay I’ll stop.
To save your wilted greens, all you have to do is
1. Rinse them off (removing any slimy leaves)
2. Fill a bowl or the sink with cold water and submerge all the leaves. For slightly wilted greens like the mustard greens in the photos, 30 minutes will suffice. For really greens in a really sad state, I’ve never had to go longer than two hours.
3. Remove the greens from the water and prep for salad or storage.
Et Voila, fresh crispy greens.

Oh me too. I planted them in our little garden last year and the baby leaves were like spicy sprouts of heaven. Loved them. Mustard, mizuna, wild arugula, keep those spicy greens coming my way.

Thanks for the tip! This yr I planted a garden and had so many greens I was struggling with them wilting before we could eat them.
